Caramel In a Can

Poking around the internet, this idea may be as old as the hills, but I keep coming across it lately.  Making caramel in a can.  Pinterest has it pinned in excess of twenty ga-jillion times (yes, that is a number), so there must be something to it.  I read several different accounts regarding how to go about it, but the simplest seemed to be the crock-pot method.  So, for +/- $2.00, I purchased a 14 ounce can of sweetened, condensed milk.  Not evaporated milk, and nothing with a pull-tab, or pop top style lid.

  1. I tried this in a crock pot and it worked fine–but it took 8-10 hours. I tried it in my digital pressure cooker for 15 minutes and it turned out perfectly. I can fit 4 cans at a time in the pressure cooker, don’t increase the pressure, just start the timer for 15 minutes and after it gains pressure the timer will start. It takes about 20-30 minutes total. I let the pressure normally settle down without opening the valve so about 10 minutes. So much faster and just as good. Made 24 pints in one day.
